I have been a chocolatier for over 35 years. I have used many different pans to make candy centers for dipping. The Candy Pan has been the best pan that I have ever used. These pans are the best! Cutting candy into uniform-sized pieces can be a challenge. I know, because I've had to do it nearly every year at candy-making time since I was a teenager.
